If your're a bit nervous about cooking fish, this is a great dish to try. Everything is cooked together en papillote (in a parcel), which seals in all the flavours and makes for an absolutely delicious result. It is a unique method to cook fresh fish without a grill, smoker, or a frying pan. We will also be making a mango, lime and coconut couscous salad to serve alongside the salmon.
