Ingredients
For the beef ragu
500g fresh beef mince
4 rashers smoked streaky bacon, finely diced
400g plum tomatoes, chopped
2 medium onions, finely diced
4 tbsp extra virgin olive oil
2 large red peppers, finely diced
4 cloves of garlic, diced.
1 medium chilli (optional), finely sliced
2 tbsp. tomato puree
200ml beef stock
2-3 sprigs of fresh rosemary, finely chopped
handful of fresh basil, plus extra for garnish.
1tsp dried Oregano
4 fresh bay leaves
Salt and course black pepper, to taste
For the pancakes
150g flour
3 Large eggs
1 egg yolk
450ml milk, full fat
40g melted butter
1 tsp sugar
For the white sauce
30g unsalted butter
30g plain flour
400ml full fat milk
100g cheese optional
Salt and white pepper, to taste
